I was wracking my brain trying to come up with a recipe or two for this issue of Front Porch. Not that that’s a diffi cult thing to do – there are hundreds of thousands, of course. But I just hadn’t felt right about any of my ideas. So, I was sitting at the kitchen table eating lunch one day, having a staring contest with my giant 5-month-old Doberman when it came to me. “Dog,” I said. (His name is really Sam.) He cocked his head and gave me that confused look at the sound of my voice. “I’ve got it. I wonder what Kris Allen would want his mom to cook him? What’s his favorite meal? He’s our cover story. I need those recipes.” Back at the offi ce, I called Kim Allen. I’ve never met her, but she was gracious and wonderful. “That’s easy,” she said. “Chicken spaghetti.” “What else would he want with it?” I asked. “Dump cake,” she said. “As a matter of fact,” she continued, “he called earlier today and asked me to make one. He wants the other singers at tomorrow night’s American Idol concert to be able to try it. “It’s Kristopher’s favorite.” (That’s what she likes to call him.) kim’s Chicken Spaghetti 3 cups cooked, cubed chicken meat 8 ounces spaghetti, broken into pieces ¼ cup chopped pimento peppers ¼ cup chopped green bell pepper ½ cup chopped onion 1 (10.75 ounce) can condensed cream of mushroom soup 1 small clove garlic 1 small package of Velveeta Cheese 1 (10 ounce) can of diced Rotel 1 can LeSeuer baby peas ½ cup shredded cheddar cheese salt and pepper to taste 1 tbsp olive oil 1. Boil uncooked chicken until tender. Retain broth. 2. Bring large pot of chicken broth (add water or additional chicken broth if necessary) to a boil. Add uncooked noodles. Let simmer, stirring occasionally, for 8 to 10 minutes or until pasta is al dente. Drain. 3. Preheat oven to 350 degrees F. 4. Sautee onions, peppers and garlic in olive oil until tender. 5. In a large bowl, combine the chicken, cooked spaghetti, pimento, bell pepper, onion. 6. In separate bowl, microwave cheese and Rotel until melted. Add can of soup to cheese mixture. 7. In large baking dish, add chicken mixture and cheese mixture. 8. Fold in peas. 9. Spread mixture into a 9x13 inch baking dish and bake in the preheated oven for 30-45 minutes or until heated. Add remaining cheese and bake until cheese is melted. Let sit for 10-15 minutes before serving. Dump Cake 1 box white cake mix (no pudding in the mix) 1 can crushed pineapple (do not drain) 1 can strawberry pie fi lling 1 cup chopped walnuts (or pecans) 1½ sticks of butter Add pie fi lling and pineapple into a 13x9 baking dish. Pour box of dry cake mix evenly over the fruit mixture. Do not pat down or stir. Add butter by cutting into chunks and placing on top of the dry cake mix. Pour nuts evenly over the top of butter. Bake for 1 hour at 375 degrees or until middle is soft but not runny. Let sit for 1-2 hours before serving. Refrigerate any leftovers. kristopher Allen’s favorites IntheKitchen
